They use the open source software BigBlueButton and Greenlight on a server from Hetzner (Germen provider) BigBlueButton was born out of the Technology Innovation Management (TIM) program at Carleton University’s Institute for Technology Entrepreneurship and Commercialization in Ottawa, Canada, and was launched externally in 2007.
Edit: In the meantime, there are probably Zoom alternatives listed. Digital Samba from Spain is probably free. And a few more with different cost models. Jitsi is not listed. Big Blue Button isn’t strict european (canadian)

Jitsy is great and there are plenty of freely accessible instances, often hosted by universities. Can recommend it for private and business purposes.

I don’t think Signal is a video conferencing solution. It can do video telephony, but I don’t know Signal as a video group conference.
It’s also not a European company. Signal is from California.
Still better than WhatsApp, but I don’t think it should be recommended on a “Buy European” community without that asterisk attached.That is correct and I agree. They are, however, trying to buck the system. They’re also free unless you choose to donate.
It’s still in beta so probably not suited for “enterprise” use, but if you just need a conference solution it should work fine.
Probably because it is difficult to make money with meeting software when a company with a Microsoft365 subscription has Teams included and would have to pay for the same service from another vendor.
